No. 57, Kabuse Sencha

             Umami ~ Oceanic ~ Mineral ~ Herbaceous

A delightful first flush, or shincha, from deep within Shizuoka, Japan. Mr. Konishi, the charming creator of this tea, has delighted us with this elegant, green tea created from the Tsuyuhikari cultivar which is shaded during the last two weeks before harvest, a technique that brings out more of the essential oils and flavors that the leaf naturally yields. (This tea is very similar to a gyokuro, which is also shaded.)  Rich notes of umami warm up against the almost voluptuous, oceanic quality of the liquor, finishing with delicate hint of spun sugar.

This tea was grown without chemicals or pesticides.
