The Shui Xian cultivar, also called Narcissus (after the flower), is one of the workhorses of the Oolong world. Although not as respected as some of the famous types of Wu Yi Oolong, put in the right hands, Shui Xian brews a dynamite tea. As is the case with this tea, a good rock tea or yancha will have a mineral-like element to its flavor profile. This medium roast tea starts with the expected flavors of hot cocoa and chocolate, giving way to headier notes of honey and narcissus. A great, lasting finish will remind you of this tea long after.
